While the outdoor dining area is more of al fresco dining wherein the view of the pool, the BGC skyline and the cold breeze of this season can be enjoyed. The bar area is outdoors as well and there are cocktail tables perfect for those who want to drink by the pool. During this season of festivities, Samba serves a special holiday dinner that is of a 5-course meal. Starting with a seafood starter, followed by a soup, then a seafood and beef main and ending the meal with a dessert. Authentic Peruvian dishes by Chef Carlo Huerta that are fresh, colorful, and flavorful.

Here are Samba’s special Christmas Eve dishes!

Ceviche de Atun y Camaron en Crema de Rocoto

Starting off with this beautiful work of culinary art. Yellowfin tuna loin, prawn tails, rocoto leche de tigre foam, glazed sweet potato, cancha corn and cold press extra virgin olive oil. The freshness from the seafood was on point and the rocoto leche de tigre foam was sweet with a spicy kick.

Cappuccino de Ave al Aji

Followed by Cappucino de Ave al Aji. Lola’s creamy chicken soup with cinnamon and bread croutons. Comforting chicken soup with a hint of cinnamon paired with bread croutons that has a perfect crunch.

Corvina en Reduction de Chupe

Moving on the the mains. First was Chef Carlo’s lovely seafood main, a dish that’s made with braised black cod fillet and grilled prawn with coral butter sauce, creamy fava bean puree and micro greens. The braised black cod fillet had a crispy skin and a flaky flesh, and the grilled prawns was plump and juicy. The coral butter sauce and the silky smooth fava bean puree complemented the natural sweetness of the seafood duo. Well done, Chef Carlo!

Lomo al Wok con Quinua Andina

The second main course was the Lomo al Wok con Quinua Andina. It’s US beef tenderloin saute, potato canchan, organic black and white quinoa, panca pepper sauce, and micro leaves. Thick and tender beef cooked to perfection paired with a savory panca pepper sauce.  The creamy organic black and white quinoa with pepper bits added texture and more flavor to this well-executed steak dish.

Trufon de Chocolate y Lucuma

Ending our 5-course meal on a sweet note. Trufon de Chocolate y Lucuma. It’s a decadent dessert made with 70% Peruvian chocolate mousse, almond crispy flakes, garden greens powder and Lucuma ice cream. This decadent, multi-layered dessert had us at first bite. The smooth chocolate mousse paired with Lucuma ice cream that gave us a taste of authentic Peruvian flavors. Perfect ending to a lavish meal.

The drinks below are available in all Shangri-La at The Fort restaurants from now until January 1, 2018. All drinks are priced at Php 450 per beverage. The Ramos Fizz (gin-based cocktail), The Santa Claus Iced Tea (rosehip and hibiscus tea), The Pinay Colada (rum-based cocktail), The Christmas Flip (cognac-based cocktail), and The Sparkles (whiskey, honey and liquid gold prosecco).

It was another food-filled and relaxing dinner for the EATSplorations family. We would also like to thank Samba for offering our little one something kid-friendly to eat. Our baby didn’t just enjoy the creamy spaghetti from the kiddie menu, she also had lots of fun walking around the outdoor area, interacting with Samba’s friendly servers and of course, EATSperiencing a very comfortable al fresco dining. Tip to parents with toddlers or children, their outdoor dining area is also non-smoking, so it is definitely 100% child-friendly. Diners can avail of this holiday dinner feast for Php 2,900 per person on December 24 and 25 2017. They also offer a New Year’s Eve feast for only Php 3,350 per person.
