One of our favorite hotel buffets in the Metro has always been so innovative in terms of catering different food festivals and putting their own touch to every dish. That’s why whenever we get a buzz that they are featuring a food festival, we really get excited. Buena Comida, a Mexican Food Festival at Diamond Hotel is happening until September 19, 2018 at Corniche. Join us in this edition of EATSplorations, as we share about the bold and earthy flavors, the aromatic and enticing hues of Mexican food. Enjoy!

From starters, to mains, down to desserts, Corniche has prepared an array of dishes that will make you appreciate Mexican cuisine more.
Margarita Granita with Spicy Shrimp
Plump and juicy shrimps made refreshing by the salsa placed on top of every piece. It was so appetizing that we made sure to have a piece or 2 of this starter.
Huevos Diablos
Smooth, rich and creamy filling for this classic starter dish. We easily had 2 pieces each in one sitting. And we made sure that our plates were spick-and-span as we savored every spoonful.
Albondigas (Meatballs in Garlic Tomato Sauce)
Meatballs is one dish that we as a family love having. In soups, topped with gravy, in pastas or simply cooked in a tomato based sauce. The Albondigas had a great combination of savory and tangy flavors from its authentic Mexican ingredients for everyone to enjoy!
Black Bean and Sweet Corn Guacamole Dip
Really smooth and creamy dip! This goes perfectly with Corniche’s extremely crunchy corn tortilla chips.
Beef Flautas
Buttery and savory tortilla rolls! The minced beef was simply delicious. Make sure you go for these babies while it’s freshly made.
Nacho Chips with Sour Cream, Pico de Gallo, Salsa Verde, Guacamole, Jalapeno, Chipotle, Spicy Red Sauce and White and Yellow Cheddar
Of course, Nachos and all sorts of toppings and dips! The corn tortilla chips was the real star. It was already very flavorful on its own and it was really really crunchy, too.
Shrimp Tequilla
Great cook on the shrimps! Juicy, tender, and super tasty. This was one refreshing dish to have. Goes really well with the Mexican rice!
Quezo Fundido
One of the brightest stars of this Mexican feast, the Quezon Fundido! This one was as cheesy and as meaty as it can get. This was obviously one of our favorites mainly because of how amazing the gooey cheese was. Awesome stuff!
Short Ribs Carving Station
We know that this one’s not Mexican anymore but it still was a very good dish to have after all the filling Mexican dishes. The meat was really tender and super flavorful. We easily had 8 slices of this one!
Manzanas Almendradas, Flan Napolitano with Caramel, Cinnamon Churros
Dessert! The selection was just right. Well, 3 Mexican desserts after all the savory Mexican dishes is not so bad. Our favorite was the Cinnamon Churros because we really love churros. It also goes well with the melted milk chocolate!
