In this edition of EATSplorations, we will be sharing about our Steak Dinner at Sage Bespoke Grill in Makati Shangri-La! We’ve been to Sage a number of times now and we can honestly say that they’re very consistent with the quality of steaks and dishes that they serve. Also, their service is really top-notch! Steak Dinner at Sage Bespoke Grill – Makati Shangri-La!
Sage Bespoke Grill is THE STEAK restaurant of Makati Shangri-La. It is where you should all go for steak when you are in Makati because it is home to the best steaks and wines you can have in town.
The night’s menu! It’s all about wine pairing. From the first course down to dessert, Sage has prepared different kinds of wine to be paired with all the dishes that their Chef de Cuisine has prepared for us! Looks exciting, right?!
Chef Sebastian Barcudes, hails from Argentina which is well-known for some of the best beef in the world. It is also home to some of the best steakhouses in the world! That’s why Chef Seba is THE man for the job of being Sage’s Chef de Cuisine.
Some bread and butter to start things off! By the way, the puffy bread below the baguette is Cremona (an Argentinian bread made with beef fat) made by Chef Seba himself.
Sage Heirloom Tomato Salad paired with Castelo Banfi “Le Rime”, Tuscany IGT Pinot Grigio 2017
Perfectly paired with the crisp and acidic Pinot Grigio White Wine, Sage’s Heirloom Tomato Salad was a delight in every bite! Each and every piece of heirloom tomato had varying notes of sweetness that depends on the kind cooking method it went through. It may look like a very simple dish but it’s packed with different textures and layers of flavor.
Seared Hokkaido Scallops paired with Bouchard Pere et Fils, Bourgogne “La Vignee”, Burgundy Chardonnay 2016
Perfect with light and delicate food, the Seared Hokkaido Scallops tasted as good as it looked! The richness and unique sweetness of the scallops were complemented well with lemon, cauliflower, and a little mint. We were really impressed with the great technique shown by Chef Seba on this one. This one’s definitely a must-try at Sage!
Steaks sliced tableside by Chef Seba himself! We had the Sher Wagyu Ribeye and Sher Wagyu Tomahawk. Both steaks were paired with Terrazas Altos Del Plata Malbec, Argentina 2017.
Sher Wagyu Ribeye from Victoria, Australia
Ribeye done right! Look at how perfectly grilled these cuts of ribeye were. Just the right sear on the outside and the perfectly pink medium-rare center. No effort needed when eating. It just shows how high the quality of steak this one has matched with the great skills of the chef who grilled it!
Some of the sides that we EATSperienced: Sage Fried Rice, Mushrooms Ragout, and Truffled Mashed Potatoes!
Sauces and a few more sides! Creamed Spinach and SautƩed Seasonal Vegetables.
Sher Wagyu Tomahawk from Victoria, Australia
This one is the STAR OF THE NIGHT! The Sher Wagyu Tomahawk was as good as advertised. Chef Seba had nothing but praises on the quality of Wagyu this one had. With such high respect for the beef, of course, the chef had no choice but to give absolute justice to it by cooking it to perfection. Did we like it? We loved it! We were in awe after every piece that we downed. We were in steak heaven after all was said and done. Hands down one of the best steak EATSperiences we have ever had!

Raspberry Souffle paired with Chateau Imperial Tokaji, Hungary 2011
Sweet wine paired with the citrusy and tart dessert. We’ve never seen a souffle as big as this one! Good thing it was very tasty, too. We enjoyed the contrast of flavors in every bite. It’s not your usual super sweet dessert.
Tarte Tatin ala Chef Seba
Chef Seba surprised us with another dessert! It probably was our reward for being great guests, hehe. His version of the famous Tarte Tatin was very delicate, sweet, and had great finesse. Not to mention, it was extremely lovely, too! What a way to end an amazing night of steak, wine, and friendship!
Once again, we had so much fun at Sage Bespoke Grill! The place is very lovely. The food is 5-star quality. The service is top-notch. What more can we ask for, right?!
