Earlier this month, I, Mr. Eats, went on a food trip to EATSplore some of the limited edition items for the Choice of the Nation. It was a day of pure eating as I was able to try out FOUR restaurants in one day. The food trip took me as far as Pampanga and it led me to 25 Seeds by Chef Sau del Rosario. 25 Seeds features farm to table creations inspired by many of his adventures in his 25 years of being in the food industry and of course, by his Kapampangan roots. I was really excited to try his food again because of my wonderful EATSperience at Cafe Fleur in 2016. In this edition of EATSplorations, I will be sharing my thoughts about his famous dishes and also about his mayo-inspired dishes. 25 Seeds in Angeles City, Pampanga!
25 Seeds is located in the Dycaico Ancestral House in Angeles City, Pampanga. I love that Chef Sau chose this location to house 25 Seeds because it maintains that homey vibe and atmosphere perfect for tasty Kapampangan dishes.
The old and the new. I love how both were perfectly represented in 25 Seeds’ interiors. The restaurant may be in an ancestral house but it definitely has a lot of new touches that will surely appeal to both young and old patrons. I also loved how the restaurant was still able to maintain the house’s homey vibe which makes it oh so perfect for family gatherings and intimate meals.

Farm fresh ingredients in one healthy and tasty bowl of salad. I am more into meats but whenever I see a good salad, I never think twice in having it and this salad of Chef Sau is really one of a kind. Simply amazing.

The buns look, feel, and taste like ciabatta and it goes perfectly with the tinapa spread. A great tasty starter by Chef Sau!

Creamy, sweet, and super savory pasta! I loved how beautiful this pasta dish looked and of course, how it tasted. It’s not your typical heavy and super rich cream pasta. It’s just right. Pasta done right.

Can’t think of anything else to say but BEST OF BOTH WORLDS! Sisig and Paella. Filipino and Spanish favorites in one awesome dish. This version of East meets West is so damn delicious. I love love love sisig so much and it being on top of a perfectly cooked paella—it tastes like heaven.

This is one of the best and most beautiful Kare-Kare I have ever had. I mean, just look at the crackling skin and that smooth and creamy macadamia kare-kare with all the veggies and flowers. Every bite out of this is screaming, “Extra rice, please!!!” This Kare-Kare by Chef Sau is truly memorable. Awesome stuff!

Juicy patties of crab meat with a delicious and creamy sriracha aioli. Yum, yum, yum! I enjoyed this so much because I didn’t need to fight through crab shells. No effort whatsoever needed. I had all the time to savor its goodness.

I love this one so much! Why? Well, a, because I love prawns and b, because the aligue calamansi aioli had great balance of flavors. This one’s a great way to start off a meal at 25 Seeds and I hope it stays on the menu.
If you guys haven’t been to Pampanga lately or haven’t gone to Pampanga at all, 25 Seeds is a great reason to start planning a food trip to the Culinary Capital of the Philippines. I am very impressed with all the dishes that I tried. It was such a memorable EATSperience dining at 25 Seeds. Chef Sau’s culinary journey of 25 years has definitely inspired each and every dish. I am truly thankful for being able to EATSperience it here. Can’t wait to come back for more of the Sisig Paella and Crispy Pork Belly with Truffled Macadamia Kare-Kare.
