New World Manila Bay’s Executive Chef, Chef James Williams

Chef James, who is a native of Australia, headed the event as he and his staff prepared Australian grass fed beef dishes for everyone to enjoy. The evening kicked off with a velvety Parmesan Flan, followed by a Carpaccio and a local favorite, Sinuglaw. Of course, the stars of the night are the two cuts of Australian grass fed steaks, a ribeye and a tenderloin. Both were sous vide first for an evenly cook inside, then finished off with a perfect medium rare off the grill.

Parmesan Flan

Great contrast of texture and flavor from the flan and the bread. We couldn’t help but dip the crispy bread into the velvety smooth flan.

Both dishes were able to showcase the umami flavor in its simplest form, raw and seared beef. It may still look like taboo for some, but raw beef tastes really good. It’s just the umami flavor being the star and the seasoning as the perfect supporting cast in highlighting the beef’s goodness.

Both beautiful cuts of Australian grass fed beef were amazing! We didn’t miss the fatty grain fed beef at all. It felt great to have something that’s leaner and healthier. The ribeye and the tenderloin steaks still had the strong umami flavor without making us feel guilty.
