Solaire Resort and Casino is home to one of the country’s grandest casino floors and luxurious rooms with a view of the ever so beautiful Manila Bay. A lot of its guests may not even know that Solaire is also home to a great number of dining outlets that can certainly match up or edge out the most famous restaurants in town. In this edition of EATSplorations, we will be sharing with you about our Tex-Mex Feast EATSperience at Viva Tijuana! Viva Tijuana at Waterside features a hearty buffet spread of Tex-Mex flavors with free-flowing beverages all Saturdays of March from 6:00pm to 10:00pm. Sounds exciting so far? Viva Tijuana at Waterside – Solaire Resort
Piñatas, maracas, and hats welcomed us at Waterside’s Viva Tijuana! Take a photo here with your loved ones and make sure to use the props provided. The vibe inside Waterside was extra festive and colorful during our Viva Tijuana EATSperience.
There was even a band playing beautiful music to set the tone for us hungry and thirsty diners. The place was packed with Tex-Mex food lovers and the staff of Waterside was ready to serve up all the good food and drinks they have to offer. It got us really excited for Viva Tijuana because we both love Tex-Mex food! Tex-Mex food meaning tacos, nachos, quesadillas, and so much more! Oh wait, have we already mentioned that it’s UNLIMITED?
A quick look at our Viva Tijuana EATSperience!
We started off our Viva Tijuana EATSperience with the Nacho Bar. Sweet potato chips, potato chips, and of course, spiced tortilla chips with an assortment of toppings and a whole lot of CHEESE. Definitely a great way to kick off a Tex-Mex feast!
A trio of freshly-made quesadillas welcomed us in this part of the buffet spread! Corn Salsa with Pico de Gallo, Spicy Ropa Vieja with Roasted Peppers, and Cajun Grilled Chicken with Jalapeño. If you are into spicy food, then you will surely like the Ropa Vieja (braised beef). For us, we enjoyed the Cajun Grilled Chicken because it had enough heat yet still very pleasant and flavorful for our taste buds.
Viva Tijuana also has Tamales! For those of you who are not familiar with Tamales, it’s made from starchy dough that’s usually corn-based and can be filled with meat and vegetables. It’s wrapped with corn husk and steamed to cook. They had two kinds that night, the Smokey Pulled Pork and the Slow Cooked Beef with Refried Beans. We loved the second one more because it was smoother and really flavorful.

Waterside is famous for its amazing paellas but their Seafood Jambalaya is not too shabby either. It tasted pretty close to their paella but with more spices which was really good and paired up well with all the other meaty dishes at the buffet spread.

This was cooked beautifully! Tender meat and the skin had the right level of crispiness. Make sure to top this off with the Tomato and Chorizo Stewed Pinto Beans for some added flavor and texture. It was our first time to try something like this and it’s safe to say that we enjoyed it. Well done, Waterside!

This was our favorite of this EATSperience! Extremely tender meat that’s cooked to perfection, is always a huge check in our book. It’s seasoned perfectly, too. Just add a little bit of its bourbon bbq sauce for a complete EATSperience. This one’s more than enough to make us come back to Viva Tijuana over and over again!

Sweet, sour, and a little spicy. That’s what these ribs are all about. At first, we thought it was going to be really spicy but it had great balance of flavors that made it taste so good. The meat was super soft and it was already falling off the bones. Awesome stuff, Waterside!


The Tres Leches Cake and the Pumpkin Flan sealed the deal for us! These two desserts were flat out amazing. We won’t describe how it tastes like but if you ever encounter these two, never ever leave Viva Tijuana without eating it. Alright?
A night filled with food, music, and drinks at Viva Tijuana! This Saturday-only dining EATSperience surely made our tummies really happy. Thanks to the tasty Tex-Mex dishes that were oozing with so much flavor and character. Congratulations to all the men and women of Waterside especially to Chef Hylton Le Roux!
